But Oh, Those Summer Nights...

This weekend, one of my best friends Abby came to visit!

 We made "Val's Famous Bean Bowls" which consists of black beans, rice, mushrooms, bell pepper, and garlic sauteed in salsa and spices and topped with fresh tomatoes, avocados, green onions and a sprinkling of parmesan cheese. Magnifico!

 Murphy was grumpy and hung inside with his cheeseburger.

The other night I met up with my friend Marcie to try out Amelie's French Bakery and Cafe in NoDa. I've been dying to go, and I was NOT disappointed. We each had a tartine, which is a small piece of french bread with different toppings or spread. One had tomato, Dijon, basil, and mozzarella; and the other was topped with portobella mushrooms, leeks, and cheese. We finished off the evening with a chocolate torte, which I forgot to take a photo of because I was in chocolate heaven and was delicious! In addition to the food, the atmosphere was really cool. Very artsy and comfortable. I will definitely go back to Amelie's!

Feelin' Fally...

Perhaps it's the wonderfully non-humid day today, or the fact that football and changing leaves are right around the corner, but Anthropologie's new Fall pieces have me in the mood for Autumn! Those adorable cardigans are calling my name and the cords are very Dazed and Confused-ish. Fall is by far my favorite season!

In Perspective...

These two stories have shocked me, and have me thinking just how insignificant and small my problems seem in comparison. The first is a story about nearly 200 women, and four children, being gang raped in the Congo July 30 as rebels fight over mineral reserves in the area. It's heartbreaking and makes me feel utterly helpless. How can we (and by we, I mean the American government) allow this to go on? What can be done?

The second story is about 33 miners trapped over 2000 feet below the surface in Chili. They've been there since August 4, and yesterday, rescuers predicted that it could take 4 months to set them free. I am claustrophobic and the thought of being trapped like this is unbelievable. I read that many of the men have lost nearly 20 pounds already. They have been surviving by sharing cans of tuna and mackeral every other day, and rescuers will soon be able to get them oxygen, water, and medication. It's absolutely amazing they have been able to survive this long, and I hope they make it out long before four months.

Yesterday I served jury duty for the first time. Thankfully, I didn't get called in to be involved in a case. The juror facilities are really nice and they did a great job at keeping us entertained from 8 am - 4:30 pm. The room has floor to ceiling windows, large screen TVs that played cable shows and movies throughout the day, a snack area, game room, and wi-fi internet everywhere. For lunch, I visited Blynk Organic and it was delicious! I had the A.M.T. (avocado, mozzarella, and tomato sandwich with basil pesto). There are so many yummy restaurants downtown, I would be broke if I worked/lived down there.

Happy Birthday Murphy!

Three years ago today, Jer and I were moving to Charlotte, and Murphy was being born in Ohio! Over Thanksgiving that year (2007), Jer came to pick me up and had a little black and white puppy adorned with a ribbon...for me! It was the best gift ever! He's our best friend, and we are thankful every day he is in our lives. He is the coolest, most laid back dog I've ever met. We love you Murphy! Happy Birthday!

Flutter By...

I couldn't believe the number of butterflies that were hanging at our campsite. It was a natural butterfly garden! They were so beautiful!

Dog Dayz...

Last weekend I went to my 10 year reunion. I hardly took any pictures since my friends were taking so many, plus I just wasn't in the mood. I had a great weekend but I'm pretty sure it's the last reunion I'll participate in...

BUT, the reunion did give me a great excuse to buy my first Anthropolgie dress!

In other weekend news, Baby the West Highland White Terrier (left), is doing great in her new family. She and Turner (right) are best buddies!

As you can see, she's a real daredevil!
And an overall happy dog!

Summer Treat Time...

I saw an ad for SO Delicious Coconut Milk and Almond bars in this month's Whole Living magazine and I had to try them. They are dairy free, sweetened with Agave, and have only 170 calories! The coconut ice cream is wonderfully creamy and delicious. I highly recommend!

Home Cookin'

Having a mom that is a culinary arts professional means that I get some wonderful food when I visit! Yesterday we had a cookout with grilled shrimp burritos, homemade guacamole, and hand squeezed lemonade. For dessert, blackberries and strawberries with homemade blackberry wine sorbet. This morning I was treated to a delicious veggie frittata with grits. Delicious! Thank you mom!
