Recipeat

What's a recipeat you ask? Why it's a darn good recipe that's worth repeating! I recently discovered lentils and am head over heels. Smitten Kitchen featured this stewed lentils and tomatoes recipe (originally from Barefoot Contessa) and I couldn't wait to try it!


I added kale and mushrooms...you really could add any veggies you'd like! It was a warm, delicious, curry-spiced pot of heaven, and thankfully there was enough for some yummy leftovers! I hope everyone had a wonderful Thanksgiving!

Home Sweet Home!

For the long Veteran's Day weekend I went home to visit family, went on a hike with some friends, and cleaned out my childhood closet (more on this in a future post). It was so nice to spend more than one full day at home. I miss my family so much!

The first night I was there, it snowed! It was tough to get a pic, but you can see those tiny white flakes in the light! Turner and Murphy snuggled under blankets to warm their paws.

The next day was sunny and warm...the dogs had so much fun!

I met up with two of my best girlfriends for a hike to the Long Point lookout. AMAZING view of the New River Gorge Bridge! I love weekends at home!

Who's Got the Beet?

I ran across some gorgeous beets (and bok choy) at the farmer's market!

And this gorgeous spinach and mixed greens mix...wow! I'm very particular about my salad greens and often find myself picking through and tossing about half of the store-bought kind. There wasn't a single brown piece of lettuce or spinach in this bag!

I cut up the beets (so pretty!) and roasted them...
Put them atop a bed of those fresh greens and paired it with a veggie quiche (also from the farmer's market). The beets tasted so wonderfully sweet and, well, "beetie" (is that a word?).

Leaves They are a Changin'

Finally! The gorgeous colors of Autumn have made it South. Two weeks ago I was stunned at the beautiful colors in the West Virginia mountains and now they've arrived in my backyard! I had to run out and get some shots of this lovely season.

The sun was shining just perfectly in his eyes. Look at that beautiful chestnut brown color! He's my little angel with fur!

The oak trees in our neighborhood have been throwing acorns at us for weeks now! The driveway is covered in acorn butter. Murphy tiptoes around them so they don't hurt his sweet little paws...OK sometimes I might carry him to acorn-free land  :) 

 I am so in love with the color scheme in this last photo! Vibrant!

White Wedding Day!

Jessica's wedding took place on a gorgeous Ocracoke Island beach, and her reception was a costume party in celebration of Halloween. It couldn't have been more beautiful...or fun! Despite some cold weather, hearts were warm watching these two unite...Congrats Jess and Jeffrey!

The restaurant where the rehearsal dinner was held had the coolest lighting!

Jess wore these boots with her wedding dress! So cute!

Jess walked down the aisle to Death Cab for Cutie's, I Will Follow You into the Dark. This song is so beautiful, but totally makes me teary-eyed when a wedding ISN'T happening! Needless to say, tears were flowing during this ceremony. It was all very personal and so sweet.

We all went home and put on our costumes for the reception.

The Mr. dressed up as Wilfred and I was Little Red Riding Hood. Everyone was jealous of his warm cozy costume! This was one of my favorite weddings ever!

Girls Only!

Jessica's bachelorette weekend was so fun! Like I said in my last post, we rented a couple cabins in WV during Bridge Day. The leaves were beautiful and the weather couldn't have been better. The cabins were very dark inside so my pics aren't as clear as I'd like, but you can get the idea!

A few of us arrived early to prep the cabin and get it Halloween-ified!
Cassie and I made some mini cupcakes: Pumpkin Nutella Swirl (from Real Mom Kitchen) and Carrot Cake with Maple Cream Cheese Frosting (from Smitten Kitchen). They were awesome!  
Party prep complete! Now we just had wait for the guests!
We partied the night away and woke up Bride Day morning to a breakfast of champions...mimosas!

Then we hiked to the bridge. I'd say we walked about 4 miles that day!

Nothing like jumping of an 800+ foot bridge backwards!

I made these flyers (sign on top) to hang random places throughout the weekend. It's a photo of Jess from high school that she absolutely hates, with the text: "Don't Be Mad! You're Getting Married in Two Weeks! Congratulations Jessica!" We put them on porta potties, in restaurants, in bars, you name it! Jess was a great sport about it!
