Yesterday was absolutely gorgeous. Sunny and almost 80 degrees with a warm breeze in the air. After reviewing the weather for the next few days - rainy, cloudy, stormy - I used some personal time and left work a couple hours early. I grabbed the dog, a book, some iced tea, and headed to the lake. It was a very relaxing and unexpected couple hours of bliss! I tend to be an uber-planner so it was nice to just go with the flow. I ended the afternoon with some delicious food. Of course I took photos! Hope you have a wonderful weekend, rain or shine!
When we got down to the dock, I realized I forgot to bring a bowl for some water! I went Macgyver-style and fashioned a bowl out of a clean doo-doo bag. He loved it!

I picked up a couple cupcakes for the hubby and I on my way home. His: strawberry cream, Hers: dark chocolate almond sea salt (my absolute favorite)
OK, so I know it doesn't look too appealing, but it's one of my favorite dinners lately. First I roast cauliflower, red bell pepper, and onion for about 15-20 minutes. Next it goes into a skillet with already-sauteed mushrooms, oil, and garlic. Top it off with some spinach and marinara sauce. They key is a delicious marinara. I've tried several times to make my own, and it's pretty good, but I am addicted to the Harris Teeter brand lately, really, it's fantastic! I usually add a bit of water (less than 1/3 cup), stir, and cover. Simmer it for about 20-30 minutes, stirring occasionally. Top with some white cheddar and a side of garlic bread...YUM! I burnt my mouth several times b/c I wanted to eat it so bad and couldn't wait for the cool down.
